Celebrity chef Gordon Ramsay has opened a new restaurant at Fairmont Cheshire, The Mere, marking another milestone in the £90 million transformation of one of the county's best-known luxury hotels.

The restaurant has opened within the newly refurbished resort near Knutsford and forms part of a wider redevelopment that has rebranded the historic hotel under the Fairmont name following a three-year programme of investment.

Named Gordon Ramsay at The Mere, the venue offers a modern British fine dining experience inspired by dishes served at the chef's renowned London restaurants. It joins two other new dining destinations introduced as part of the hotel's extensive refurbishment.

Located within the 157-acre estate, the restaurant overlooks landscaped gardens and the resort's lake, with indoor dining areas complemented by an outdoor terrace designed to make the most of the surrounding countryside.

The opening represents another step in Fairmont's ambition to position the hotel as one of the North West's leading luxury destinations, attracting both overnight guests and visitors seeking high-end dining experiences.

The wider redevelopment has transformed guest accommodation, public spaces, restaurants and leisure facilities while retaining the estate's long-established reputation as one of Cheshire's premier golf and hospitality venues.

For decades, The Mere has been known for hosting major golfing events, business conferences, weddings and celebrity occasions. The arrival of Gordon Ramsay's latest restaurant is expected to strengthen its appeal as a destination for food lovers as well as visitors to Cheshire.

Alongside the signature restaurant, guests can also visit the Orangery, which serves afternoon tea by day before becoming an evening champagne and oyster bar, while the Club Lounge offers a more relaxed dining option throughout the day.

The hotel officially reopened as Fairmont Cheshire, The Mere in July, with the new restaurant forming part of the first phase of its expanded hospitality offering.

The opening is expected to further enhance Cheshire's growing reputation for luxury hospitality, adding another high-profile dining destination to the county's tourism and leisure sector.
